Our jerk chicken is made traditional style. We marinate our chicken overnight in jerk sauce made up of scotch bonnet pepper, scallion, pimento, ginger and thyme then brine. Once marinated it is then slow cooked in the oven until tender and then finished on a chargrill. Served with our homemade jerk sauce.
