Hailing from the remote high mountains of Haiti, Mathilde spent her childhood learning her family’s traditional recipes over open flame. As an adult, she returned to start her own non-profit in her village to fund projects for a school and a health clinic. Now, after a successful run at food incubator Portland Mercado, Mathilde is on a mission to showcase the richness and beauty of Haiti through a different lens. She’s turned Haiti’s national flower, the hibiscus, into a spicy ginger brew. Here, we simply add coconut cream, then churn it into a bright, tropical sherbet. Made with Mathilde’s Kitchen Contains: Tree Nuts (coconut)
Rhubarb—used in traditional Chinese medicine, presented at Queen Victoria’s coronation, grown in total darkness in the Rhubarb Triangle—may have lofty origins. But along the West Coast, this humble, hardy, prehistoric-looking vegetable is a welcome sign of spring. We transform the PNW’s abundance of rhubarb into a simple crumble a la mode. To do so, we dark roast anise for the crumble, delivering a floral punch that can stand up to the acidity of our housemade rhubarb jam, the sum more satisfyingly complex than its individual parts.Contains: Milk, Wheat
In this ice cream, exquisite jasmine tea is steeped in cream and sugar for 12 minutes. Not one minute more or less. San Francisco’s Red Blossom Tea Company sources directly from rural areas of China and Taiwan during the spring tea harvest to make approachable but keenly flavored craft teas. Their Spring Jasmine Maofeng consists of handpicked early harvest green tea leaves from Fujian that get covered in a blanket of fresh jasmine blossoms, making for a tea with both body and deep jasmine aroma. The ice cream is flavored entirely with this tea and a smidgen of seasoning, then drizzled with almond stracciatella.Made with Red Blossom Tea Contains: Milk, Tree Nuts (almonds)
Our caramelized cashew praline was destined for these cold-brewed beans, balancing the bold coffee's floral flavors while intensifying its fruity notes. Made with James Coffee Contains: Milk, Tree Nuts (cashews)
Bliss for lavender lovers. We steep pounds of lavender petals in local honey, bringing out more complex, herbaceous flavors than you’ve ever experienced. Contains: Milk
Ice cream illuminates this incredible Oregon olive oil’s velvety texture and tropical, grassy notes. At once simple and wildly complex. Made with Durant Olive Mill Arbequina Olive Oil Contains: Milk

It’s called “double fold” for a reason: Our friends at Singing Dog use twice as many vanilla beans in their extract to pack an incredible punch. This definitely ain’t vanilla vanilla. Contains: Milk
We candy Oregon bartletts to bring out their flavor, then fold in cave-aged crumbles of Rogue Creamery’s blue cheese (voted best in the world) for a bold thwack. Made with Rogue Creamery Contains: Milk
Our reimagination of the classic. We spike our cream with just enough Guatemalan fleur de sel to bring out its nuances, then drizzle in ribbons of our hand-burned caramel.
Made with the same bold malt you’d use to brew amber ale, our cookie dough is perfectly salty—we use two types of salt. Thick malted fudge rounds it all out. Contains: Milk, Wheat
Coconut water and a little sugar are the only things we need to let the sweet-tart quality of strawberries shine in this creamy, refreshing flavor. Made with Harmless Harvest Coconut Water
Coconut and pure Oregon mint oil coalesce into a delicate, floral ice cream, freckled with organic chocolate from San Francisco’s craft chocolate godfather TCHO. Contains: Tree Nuts (coconut), Soy
Inspired by the natural ingredients around us, we leaned into these flavors and realized that nothing compares to the absolutely lush, velvety texture of an avocado. To amp up its rich natural fats, we churn in bananas for a subtle sweetness to round it all out.
Our rendition of the nourishing classic. Jasmine rice gets cooked with coconut milk flecked with warmingly aromatic cardamom and cinnamon spices. We then mix it with a little sugar and coconut cream and churn it into ice cream. Pure, simple, and ultra-creamy. Contains: Tree Nuts (coconut)
This is the most decadent ice cream you’ve ever tasted, thanks to the trifecta of single-origin chocolate, coconut cream, and hazelnut butter. Chunks of our homemade (gluten-free and vegan) “Oreos” make it over the top. Contains: Tree Nuts (coconut, hazelnut)

It’s baaaaaack. For this legendary technicolor favorite, we hand-sort the luck from the charms, steeping the whole-grain cereal in cream for that bottom-of-the-bowl sweetened milk before stirring in mountains of rainbow ‘mallows. Contains: Milk
Revel in breakfast, coffee, and dessert all at once with this cold brew ice cream swirled with malty fudge. We preserve the epic crispiness of hip new cereal brand OffLimits’ coffee and cocoa spheres by enveloping them in salty chocolate bark. Made with OffLimits Dash Coffee and Cocoa Cereal and Sandino Coffee Roasters Contains: Milk, Wheat, Tree Nuts (coconut)
The unique texture of our dairy-free, starchy oat ice cream with additional fat from peanut butter makes for a deliciously dense, gelato-like base. Crackly peanut butter-coated cereal clusters and peanut butter swirl enhance the sweet nutty flavor. We’re confident we’d make any seafaring Captain proud. Contains: Peanuts, Tree Nuts (coconut)
We took a trick from three little elves and made a magical rendition of brown butter treats, pressed and toasted with marshmallow into a lacy florentine for that insatiable crunch, in a rich, malty graham ice cream. Contains: Milk, Wheat, Soy

Swirls of housemade marionberry jam make an amazing accompaniment to malty cereal-flecked ice cream with gently crumbled brown butter sugar cookies. Contains: Milk, Wheat, Eggs
Our friends at Seattle’s beloved Cupcake Royale shared their phenomenal Salted Caramel Cupcake recipe in exchange for the skinny on making ice cream. Hunks of chocolate cake slathered with salted caramel frosting and cake crumbs soak up the fleur de sel-spiked cream for a flavor that’s reminiscent of ice cream cakes from birthday parties past. Contains: Milk, Wheat, Eggs
Cinnamon roll, cinnamon gaweyness with ribbons of frosting!” proclaimed Ella, the second-grader who dreamt up this runaway hit for our Student Inventor Series. It preserves each glorious part of the classic bun—fluffy roll, gooey filling, and cream cheese frosting—in cinnamon ice cream. Contains: Milk, Wheat, Eggs
A study in strawberries: roasted strawberry ice cream, vanilla-y strawberry jam, gooey tres leches cake. Contains: Milk, Wheat, Eggs
When Salt & Straw opened, maple bacon was everywhere, so we would have been remiss to completely skip the trend. In true early form, we wanted our take to be unique, so we went to an unconventional partner for the answer: a brewer. Brown ale has a sweet maple-y flavor. This flavor marked our first-ever collaboration with a local brewery, now a favorite of ours, and presented the challenge on how to mimic their brewing process in ice cream. Contains: Milk, Wheat, Tree Nuts (coconut)
Creamy cashews are carving out a niche in vegan cheese culture with a lush texture you won’t believe is dairy-free. We blend the loveliest cheeze around with coconut yogurt and lemon zest for a tart cheesecake swirl, then make an almond crumble reminiscent of graham cracker crust. The satin cheesecake gets layered into a salted vanilla coconut ice cream. Contains: Tree Nuts (cashews, almonds, coconut)
