This is a farmstead, raw cow’s milk Mimolette, hand made by La Ferme du Vert in the northern Pas –de-Calais region of France. The ancient recipe of this cheese originates from the Netherlands and it was later introduced and produced in France. Mimolette has an original spherique shape. This Mimolette is called “tendre”, meaning tender, as it is only aged for a few months and has a softer, creamier texture than aged Mimolette which can sometimes be as hard as a rock. Also, it is made with whole, raw milk and has a higher fat content then industrial production Mimolette which is made with skimmed, pasteurized milk. Mimolette Tendre Fermiere has a natural beige and grayish rind from aging on wooden plank. The orange paste comes from annatto natural coloring. This is a true farmstead cheese, made with raw cow’s milk collected on the farm, and revealing complex nutty and buttery flavors.
