Kirk and Sweeney was a wooden schooner, best known for smuggling rum from the Caribbean to the Northeast during the early years of Prohibition. Kirk and Sweeney 12 Year is crafted in the Dominican Republic from sugarcane, then aged for 12 years in American Oak barrels.
Mt. Defiance Distillery’s rums are made using panela from Columbia. Panela is an unrefined whole cane sugar made by the boiling and evaporation of sugarcane juice. It combines the best features of molasses and fresh cane juice used in most rums. They double distill their rum in small batches using a copper pot still. Their dark rum is aged for one year in small, used rye whiskey barrels. A touch of caramelized sugar is added before bottling. Mt. Defiance Dark Rum has a vanilla and oak nose, caramel, chocolate and roasted almond on the palate, with a light note of toasted marshmallow on the finish.

Interestingly, this is neither Strong nor Light aroma, but ‘Phoenix Aroma’ – one of the smaller subcategories. Wiggly Bridge Distillery White Rum is 100% Caribbean molasses that is fermented and distilled in true caribbean fashion. The Distillery employs the use of a dunder pit which lends their rums a unique butteriness and characteristics of the Islands. Butter, butterscotch, leather. A true taste of the caribbean, loads of butter, essence of tropical fruit. Big mouthfeel that is coating and soothing. Loads of molasses with hints of raisin and cinnamon. Medium-bodied, medium-to-long lingering, slightly dry finish. Nice, but please, this is a spiced rum,no way is most of this natural to the rum itself. Kysela Pere et Fils, LTD. (KPF) was founded in March of 1994 by Master Sommelier Fran Kysela. Fran inherited an interest in wine from his father, who is one of the top collectors in the country and still maintains a 4,000 bottle cellar in Cleveland, OH. While attending graduate school at Cleveland State University & majoring in Zoology, Fran took a position selling Fetzer & Gallo wines for a local distributor (Goodman Beverage). Being a student with little money, he took the job knowing he could use the extra income and thinking, erroneously, that he could work in the wine business “part time”. The wine business soon became all consuming and he left graduate school all together.
Cotton & Reed ferment raw cane syrup and blackstrap molasses with a Rhum Agricole yeast strain and a Chenin blanc yeast strain to develop a rich tropical fruit character. Two distillations on their hybrid pot/column still take this spirit up to approximately 180 proof. This gives White Rum a light enough body to perform in a mojito but leaves enough fruity character to create a fruity daiquiri. Once it comes off the still, they add filtered water, run it through a charcoal filter then bottle it by hand at the Northeast DC distillery. Use for light, fruity, summery cocktails.
The Denizen bottle is a straightforward affair: upright clear glass with a metal screw cap closure. The bottle feels good in the hand and pours easily. The front label evokes feelings of a bygone era where traders plied the Caribbean waters bartering European finished goods for barrels of rum. The rear label tells the story of the liquid and provides some tasting notes. In the glass, the rum presents as a deep copper with bright golden highlights. A swirl of the snifter produces a ring atop the glass from which legs quickly form. As I move in for a nosing, there is a bit of astringency above the glass, so I let the rum sit for a minute, after which it’s mostly dissipated.
Clear color. Interesting aromas and flavors of roasted cane and nuts, rubber leaf and sap, buttermilk milkshake, and ironed linen with a satiny, soft, dryish medium body and a peppery, delightful, long finish displaying accents of mineral ore, lime pepper, vanilla yogurt with dried papaya, and watermelon with tagine spice finish. A complex, dry, and very serious, slightly funky white rum for classic cocktails.
Rum Diplomatico Gran Reserva is exclusively based rums aged at least 12 years. Its color is amber with hints of very brassy. His nose, sweet to start, becomes powerful by aeration, with a dominance of cooked fruit, light tobacco and honey, melted remarkably. The mouth begins with sweetness, then takes more aromatic force. The aromatic palette, of great intensity, is highly diversified: stewed and dried fruit, butter caramel, acacia honey, tanned leather, sandalwood, while being very melted and well balanced. The final syrupy, although seasonned by a touch of spices (black pepper, ginger), which extends the persistence.
Diplomatico tell us that this rum is “Aged for up to eight years, Mantuano is a blend of Column, Batch Kettle and Pot Still rums and made from molasses and sugar cane honey”.

Sparkling clear straw gold color,with no hazing separation or floating sediments. Long legs and crenellated edges develop on swirling. The top selling rum in its native land, Puerto Rico, Don Q was little known anywhere else till recently. Long a producer for other rum lines they decided to get credit where credit is due by putting their own name on their products. All natural, and in the case of their flavored rums, all natural flavorings, Don Q offers a variety of rums of various ages and price points along with a few flavored rums. Sweet then rapidly drying entry,nice pepper/oak notes vanilla, molasses dried fruits, toasted nuts, minerals with some lighter citrus type flavors. As usual with this line taste is clean, distinct and spare. Nice but not overly light or at the other end, complex body. Oak, leather, and tobacco notes well developed in this their oldest expression of their rum line. Nicely dry medium-long finish is with lots of oak char and tobacco notes leaving a lasting finish. Finish and tingling on the tongue seem to be on the edges where the younger expressions it was distinctly along the midline.
Don Q Oak Barrel Spiced rum is distilled, aged, and bottled at the Serralles distillery located in Ponce, Puerto Rico. The rum is aged for three years in American oak bourbon barrels and then blended with spices and bottled at 45 abv. The rum delivers a vanilla and cinnamon forward aroma with nutmeg, dried fruit, and other spices nipping around the edges. Sipping the rum provides a swirl of strong vanilla, followed by cinnamon, nutmeg, toasted almonds, cloves, baking spices, and dried apricots. As the rum begins to fade there is a sweet caramel laden smoky oak note that drifts into a long tannin rich finish.

Rum is a spirit distilled from sugarcane or molasses but because it is predominantly made in the Caribbean, the laws aren’t as strict as say, whisk(e)y laws. Rum is often aged in wooden barrels, but given the tropical climate of the Caribbean, the liquor matures much more quickly in the barrel so comparing a scotch aged 12 years to a rum aged 12 years isn’t apples to apples.
It is beautifully soft with subtle toffee notes and a faint sweetness on the finish almost like a fine bourbon. At the Chicago Beverage Tasting Institute 2001, after judging on criteria as aroma, taste, character, smoothness and body, the El Dorado 5 years old was awarded the gold medal, and was described as “Amber. Alcohol is present but supportive and provides a balancing bite on the finish.

Guerin vermouth is made in the Cognac producing region of France by a cognac producing house. The sweet vermouth is crafted from a base wine red and white wine grapes blended with two year old Pineau des Charentes, then the wine is infused with herbs and spices. Caramelized grape juice is added for sweetness and color, and the wine is then aged in Cognac barrels for several months.
Kirk and Sweeney was a wooden schooner, best known for smuggling rum from the Caribbean to the Northeast during the early years of Prohibition. Kirk and Sweeney 12 Year is crafted in the Dominican Republic from sugarcane, then aged for 12 years in American Oak barrels.

This Rum is carefully distilled at Kirk and Sweeney distillery, Dominican Republic. Very tasty, had a bit of a sweet side to it. A strong honey aroma with hints of vanilla.
The Original Koloa Kauai Coffee Rum is distilled, blended, and bottled by Koloa Rum Company in Kalaheo, Kauai, Hawaii. In order to make Koloa, Coffee Rum is by mashing up raw sugar cane distilled in 1210 gallon steam operated copper pots to cut the filtered water from the ancient Mount Waialeale. This rum has been distilled twice at 160-180 ABV. This spirit is a collaboration between the Kauai Coffee Company and the Koloa Rum Company.
Koloa Coconut Rum is made from the mash of raw Cane Sugar, distilled in an impressive vintage 1210 gallon steam powered copper pot still and cut with filtered water from the ancient Mount Waialeale. The Rum is distilled 2 times at 160 – 180 ABV. Koloa Kauai Coconut Rum presents itself as a white rum with a hint of Chantilly green opalescence, even and thick viscosity and well defined sparkling white legs. Intense Coconut aromatics with light hints of roasted coconut and pina colada undertones. The initial taste is quizzically dry, probably from the pleasant 80 proof that Koloa has kept the rum at, which then leads to the wonderful flavor of baby coconut flesh at the front of the palate. The spirit finishes with light toasted coconut and hints of fresh lime zest and the slightest bit of caramelized pineapple.
Koloa Spice Rum is made from the mash of raw Cane Sugar, distilled in an impressive vintage 1210 gallon steam powered copper pot still and cut with filtered water from the ancient Mount Waialeale. The Rum is distilled 2 times at 160 – 180 ABV. This spice rum is a majestic tawny color with hues of golden rich heather, much lighter in the cloying viscosity then the other expressions of Koloa Rums, probably due to the higher ABV. at 44%. The legs are thin and evenly expressed around the glass. Pleasantly presenting with the first light sniff with light cola, muted cinnamon and cacao leading into subsequent passes across the nose that tickle the olfactory with baked baklava, honey and freshly chopped walnuts. The Fifty Best held a “blind” tasting of 20 white rums with 15 members of The Fifty Best’s spirits judging panel. Strict tasting rules were applied. The order of service was established beforehand by lottery. Each of the rums were poured into fresh glasses from new sealed bottles, and served at slightly above room temperature. Only ice water, neutral unflavored crackers and chips were available to cleanse the palate.

The process for making pineapple chicha consists of placing the pineapple rind in a container with two spoonfuls of sugar and covering with water, without stirring. Next, it is covered with a thin cloth, which allows air to enter, and it is left to ferment for two or three days. Then, the remaining sugar is added and it is stirred, then strained and served cold.

Corralejo is a traditional distillery that has been in operation in Guanajuato since 1775. This silver tequila is bottled fresh off the copper pot still. Distilled from the Blue Agave plant, Tequila is a uniquely Mexico spirit. Of the five provinces it is made in, Jalisco produces the most significant share. To be legally classified as a tequila it must contain at least 51% Blue Agave, however producers with ambitions to create Tequila with the fullest flavour will use 100% and advertise the fact on the front label. From youngest to oldest, the categories blanco, reposado, and anjeo reflect the degree of ageing. Blanco, also known as silver, is un-aged. Reposados and Anejos are usually aged in ex-bourbon casks with the former receiving anything between 2 and 11 months and the latter between 1 and 5 years. Ageing beyond 5 years tends to result in the Tequila loosing its agave character.

Rich clay soils and larger planting spaces help to ensure maximum nutrition and sunlight, resulting a sweeter Agave for premium tequila production. The Agaves are then slowly cooked in masonry ovens at Don Julio’s ‘La Primavera’ Distillery, where the juice that is obtained is subsequently double distilled. Aged for eighteen months in oak, Don Julio Anejo is now available in Australia along with the highly rated ‘Blanco’ & ‘Reposado’. Initial aromas of dill, brine and bitter green vegetables but the bouquet becomes muted with aeration. The palate entry is a tad sharp and acidic, but that smoothes out at midpalate as tastes of honey, saltwater taffy and pickles take charge. Ends spirited and pungent. 38% Alc./Vol.

Information / Tasting : As natural as tequila can get, el Jimador Blanco, which means “white” in Spanish, is a remarkably crystal clear tequila that is bottled immediately after distillation. But don’t let that clarity fool you, this tequila’s unique taste comes straight from the 100% blue agave it’s made from. A crisp, authentic tequila with subtle cooked agave taste and hints of citrusy sweetness that make it the exceptional choice for great tequila cocktails. Fresh and cool with aromas of cut green grass and mineral water. In the mouth it is spicy with white pepper and jalapeno, unfolding to reveal slightly creamy vanilla custard flavors. The finish leaves a pleasant tingling on the tongue.

The woody fibers of the agave, called bagazo, are removed at this time and taken to the fields to use as compost. The agave mosto is then fermented naturally for five days in small wood vats, and then double distilled using small, labor-intensive copper pot stills.

Our Tequila is produced entirely within the walls of our estate, using centuries old, traditional methods, which although are very labor intensive, create a tequila, which is unequaled in taste and smoothness. Using the age-old brick oven, with its meter thick walls, we cook our agave for thirty six hours. Then we crush or mill the agave as my Tartarabuelo did over 135 years ago in the stone mill called the Tahona. The crushed agave is then washed with the pure mountain water from the Volcan de Tequila to separate the pulp from the woody fibers to create an agave juice called mosto The woody fibers of the agave, called bagazo, are removed at this time, and taken to the fields to use as compost. The agave mosto is then naturally fermented for five days in small wood vats, and then double distilled using small, labor-intensive copper pot stills. Our glass bottle is hand-blown in Tonala, Jalisco by artisan glassmakers and our bottle tops, artisan designed to represent the harvest agave, or Pina, are hand-made by our workers.

In order to be called Reposado, the tequila must be aged for at least 60 days, but at Herradura, it spends eleven months in oak. The aroma is a little sweet; the sweetness diminishes slightly following aeration, but is still firm, biscuity and dill-like. Entry is delightfully off-dry, keenly acidic, fresh and slightly spicy; the midpalate features long, oily tastes of wax, black pepper and palm oil. Finishes oily, textile-like and a touch metallic. “Roca” is Patron’s new premium selection, named after the Spanish word for “rock” (roca), “a reference to the giant volcanic-stone wheel traditionally used to crush the cooked agave.” Originally, manufacturers beat the cooked agave pinas with mallets to break them up once they were soft and cool. Then they moved to the tahona, or grinding wheel, operated by mules, oxen or horses (nowadays more likely by a tractor). At Patron, a two-ton volcanic stone tahona is employed. The Anejo is aged about 14 months. Remarkably light for an añejo, look for a bracingly peppery aroma and pale straw hue. Feather-soft on the palate, look for -pineapple and jalapeño pepper, fading to a pleasing vanilla and spice finish.
