Our pulled Chicken is made from our smoked chicken quarters which include the thigh and leg of the bird. We tightly wrap the skin around the quarter creating a jacket to keep the moisture in the meat. This part of the chicken contains a bit more fat but also contains a lot more flavor. Corn Cake. Cross between Cornbread and Bread Pudding. All of our trays are garnished with a scoop of Corn Cake. Jalapenos are in the mix but they are only there for flavor. Don’t be worried, they don’t really add any spice to it.

Full flavor Baked Beans with a bit of heat. We use a blend of Kidney Beans, Chili Beans and Great Northern Beans. Mixed with onion, chipotle, molasses mustard and ketchup.
