When the sweet plantains (over-ripe) are fried only once, they are called maduros Plantains are very similar botanically to bananas, but have less sugar. Like bananas, they are picked and shipped while green, and change color to yellow and then to black as they ripen. This is a seasonal item that ripens faster at different temperatures. While we do our best to time time this process we cant always produce the same results each time.
