Sweet Plantain Mofongo with Shrimp ( Mofongo de Platano Maduro con Camarones)
Deep-fried green plantain mashed with garlic, salt, broth, butter, and shrimp in tomato-based sauce around. Mofongo is a Dominican and Puerto Rican dish with fried plantains as its main ingredient. The plantains are picked green, fried, then mashed with salt, garlic, broth, olive oil in a wooden mortar, and pestle (pilón). The mofongo is produced as a tight ball of mashed plantains that will absorb the attending condiments and have either pork cracklings (chicharrón) or bits of bacon inside. It is traditionally served with fried meat and gravy.
